Ingredients

Approximately 500 g of Viva Panettone's Raspberry Panettone
500 g (2 ¼ cups) quality mascarpone
4 medium eggs (approximately 220 g without shells)
100 g (½ cup) powdered sugar
300 ml (1 ¼ cup) coffee (preferably espresso)
Unsweetened cocoa powder

Preparation

1. Prepare the coffee
Start by preparing the coffee (preferably a strong espresso). Let it cool to room temperature.

2. Separate the eggs
Separate the egg whites from the yolks. Beat the egg whites until stiff. You'll know they're ready when you can turn the bowl upside down without them moving. Set aside.

3. Prepare the mascarpone cream
In another bowl, whisk the egg yolks with the sugar for 3 to 5 minutes, until the mixture is light and frothy. Then, incorporate the mascarpone and gently mix until a smooth and homogeneous texture is obtained.

4. Fold in the egg whites
Add the beaten egg whites to the mascarpone cream. Gently mix with a wooden spoon or spatula, using an upward motion to preserve the lightness of the mixture. You should obtain a creamy texture.

5. Assemble the tiramisu
Cut the Raspberry Panettone into slices about 1 cm thick.
Quickly dip the panettone slices (for only 1 second) in the cooled coffee. Be careful not to soak them too much to prevent the tiramisu from becoming too liquid.
Arrange a first layer of panettone in your dish or verrine, making sure to cover the bottom.
Spread a generous layer of mascarpone cream over the panettone.
Repeat the process with a second layer of panettone dipped in coffee, followed by a layer of cream. If you are making a final layer, spread the cream generously.

6. Finishing touches
Sprinkle the surface with unsweetened cocoa using a sieve.

7. Chill
Place the tiramisu in the refrigerator for at least 3 hours before serving. For an even more flavorful result, let it rest overnight.
